Ingredients
- 1 cup almond flour
- 1 tsp baking soda
- ¼ tsp baking powder
- ½ tsp cinnamon
- ¼ tsp ginger
- 2 large eggs
- ½ cup coconut oil, melted or liquid
- 1 tsp vanilla
- 1 cup carrots. grated
- 8 oz cream cheese, whipped
- walnuts, chopped
- Keto Pint Sea Salt Caramel or Butter Pecan Ice Cream
Instructions
- Preheat oven to 350°F and line two 9-inch cake pans with parchment paper.
- Whisk together all dry ingredients in a medium bowl (flour, baking soda, baking powder, cinnamon, ginger) and set aside.
- In a separate bowl, combine coconut oil, eggs, and vanilla extract. Stir in grated carrots.
- Add dry mixture to second bowl and stir until well combined.
- Spread batter evenly between two cake pans and sprinkle with chopped walnuts.
- Bake for 25-30 minutes until browned on top and cake is firm to touch.
- Remove from oven and allow to cool on a cooling rack before frosting with cream cheese and layering cakes.
- Top with Keto Pint Sea Salt Caramel Ice Cream or Butter Pecan and devour!
