Keto Chocolate Chip Muffins

Instructions:
STEP 1: Preheat Oven to 350 degrees F
STEP 2: Grease miniature muffin tin with a light spray of oil or use mini liners
STEP 3: Mix together all dry ingredients in a bowl – Almond flour, sugar sub., baking powder and salt
STEP 4: In a separate bowl wish together two eggs, avocado oil, nut milk and the vanilla extract
STEP 5: Mix liquid mixture into the dry until fully incorporated. Lastly fold in your chocolate chips, saving about a Tablespoon worth for topping
STEP 6: Fill muffin tin with the batter until about ¾ full. Sprinkle the last Tablespoon of chocolate chips on the top of the filled tins. The recipe will make 24 mini muffins when using a standard cookie scoop.
STEP 7: Bake for 20 minutes in the preheated oven. Use the toothpick test to make sure the centers are done. Cool completely before enjoying!
