Keto Chocolate Covered Strawberries

Keto Chocolate Strawberries

These strawberries are coated in a delicious layer of our brand new Keto Pint chocolates. They make the perfect snack, dessert, and even appetizer.

This recipe is super simple, requires no baking at all, and is absolutely delicious. Not only that, but these chocolate covered strawberries can be made in just a few minutes. Once you finish making them, serve with a scoop of Keto Pint ice cream, and enjoy!

(Makes approximately 15 chocolate covered strawberries)
  • 15 Medium Sized Strawberries
  • 1 Teaspoon Coconut Oil
  • Optional: coconut shavings, keto-friendly sprinkles, keto-friendly white chocolate

Step 1: Melt 3 Keto Pint Dark Chocolate Bars or approximately 9 ounces of Keto Pint Dark Chocolate Chips with 1 teaspoon of coconut oil. To make sure you do not burn the chocolate, microwave the chocolate and coconut oil together in 15-30 second intervals, stirring in between microwave sessions. In the end, you want to make sure you have enough melted chocolate to fully coat the strawberries. We recommend melting the chocolate in a skinny microwave safe dish (a coffee mug works well).

Step 2: Allow the chocolate to cool for a few minutes while you prepare the strawberries. You want to make sure the strawberries have been cleaned and dried completely. After washing the strawberries, place them onto a paper towel. Then, individually pat the strawberries dry.

Step 3: Once you have cleaned your strawberries and cooled your chocolate, place a large sheet of parchment paper onto the counter. Grab a strawberry by the stem and dip it into your coffee mug of melted chocolate. Make sure that the entire strawberry is covered, but do not get any chocolate on the strawberry stems.

Step 4: As you pull the strawberry out of the chocolate, gently scrape the excess chocolate off on the rim of the coffee mug and gently shake the strawberry to remove excess chocolate as well.

Step 5: Place the covered strawberry onto the parchment paper and repeat with the remaining strawberries.

Step 6: If you want to put chocolate shavings, coconut shavings, or keto-friendly sprinkles on top, do so before the melted chocolate hardens. If you want to drizzle white or dark chocolate on the strawberries, wait until the melted chocolate has hardened.

Step 7: Allow your chocolate covered strawberries to harden. This can be done at room temperature or by placing your chocolate covered strawberries in the fridge.
Step 8: Once your chocolate covered strawberries have hardened, serve them with your favorite flavor of Keto Pint ice cream, and enjoy!

To be extra fancy, use a vegetable peeler to make chocolate shavings and sprinkle them on top.

In addition to chocolate shavings, you can melt down keto-friendly white chocolate or use your extra Keto Pint Dark Chocolate to drizzle designs on the chocolate covered strawberries. You can add glitter, coconut shavings, keto-friendly sprinkles, and so much more as well.

When melting the chocolate, you will want to make sure there is enough to fully dip the strawberries. To do this, we recommend melting 3 Keto Pint chocolate bars (or 9 ounces of Keto Pint chocolate chips). However, only about 5-6 ounces of chocolate will actually be used. You can use the extra chocolate by placing it in a zip loc bag or piping bag with a small hole cut so you can drizzle the chocolate on top. You can also save the chocolate in a zip loc bag or piping bag, sealed tightly, so you can make chocolate covered strawberries again on another day. Lastly, you can also use the extra chocolate by pouring it into chocolate molds.

The chocolate covered strawberries will last for 24-48 hours on the counter top in an air tight container. We recommend placing a sheet of wax paper underneath and on top of the strawberries to achieve the best results. You can also store them in the fridge for a few days in an air tight container. Note that condensation may form if the strawberries are stored in the fridge. To minimize the condensation, we recommend taking a piece of paper towel, sprinkling baking soda on it, placing another piece of paper towel on top, and then adding the strawberries. Make sure that the strawberries do not get any baking soda on them or else this will change their flavor.
You can serve with any flavor of Keto Pint ice cream. Our favorites for this recipe are strawberry, chocolate, and triple chocolate brownie.
