KETO GINGERBREAD ICE CREAM SANDWICHES


Keto gingerman ice cream sandwiches with Keto Pint Sea Salt caramel ice cream
Ingredients:
(Makes 3 assembled sandwiches)

Cookie:

  • 1½ Cups almond flour 
  • ¼ Cup coconut flour 
  • ¼ Cup brown sugar substitute 
  • 1 Tbsp ground ginger 
  • 1 Tbsp cinnamon 
  • ½ Tsp allspice 
  • ¼ Tsp salt 
  • ½ Tsp baking powder 
  • ½ Tsp baking powder 
  • ½ Tsp xanthan gum (optional, for chewy texture) 
  • 1 Stick of butter, softened 

Icing / Filling:

  • ¼ Cup powdered sugar substitute 
  • ¼ Tsp vanilla 
  • 2 Tbs almond milk 

 

Keto gingerman ice cream sandwiches with Keto Pint Sea Salt Caramel Ice Cream

Instructions:

Step #1: Sift together flours, sugar, spices, salt, baking powder and xanthan gum into a mixing bowl. 

Step #2: Add in your softened butter and knead dough until all ingredients are  worked together. Chill dough in the freezer for 10 minutes. 

Step #3: When chilled, roll out between two pieces of parchment paper. 

Step #4: Using a gingerbread man cookie cutter, cut shapes into the dough (about 6 cookies).

Step #5: Add cookie dough shapes onto a lined baking sheet. Bake for 12 minutes. 

Step #6: When cookies are cooled, pipe designs using an icing made from powdered sugar substitute, vanilla, and nut milk.  

Step #7: Add Keto Pint Ice Cream of choice to a cookie. Add another cookie to make a sandwich. Dig in!
