Keto Gingerbread Ice Cream Sandwiches

Ingredients
Cookie
- 1 ½ cups almond flour
- ¼ cup coconut flour
- ¼ cup brown sugar substitute
- 1 tbsp ground ginger
- 1 tbsp cinnamon
- ½ tsp allspice
- ¼ tsp salt
- ½ tsp baking powder
- ½ tsp xanthan gum (Optional)
- 1 stick of butter (Softened)
Icing + Filling
- ¼ cup powdered sugar substitute
- ¼ tsp vanilla
- 2 tbsp almond milk
- 1 pint of Keto Pint Ice Cream (flavor of your choice)
Instructions
- Sift together flours, sugar, spices, salt, baking powder and xanthan gum into a mixing bowl
- Add in your softened butter and knead dough until all ingredients are worked together. Chill dough in the freezer for 10 minutes
- When chilled, roll out between two pieces of parchment paper
- Using a gingerbread man cookie cutter, cut shapes into the dough (about 6 cookies)
- Add cookie dough shapes onto a lined baking sheet. Bake for 12 minutes
- When cookies are cooled, pipe designs using an icing made from powdered sugar substitute, vanilla, and nut milk
- Add Keto Pint Ice Cream of choice to a cookie. Add another cookie to make a sandwich. Dig in!
