Cookie

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ¼ cup brown sugar substitute
  • 1 tbsp ground ginger
  • 1 tbsp cinnamon
  • ½ tsp allspice
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ tsp xanthan gum (Optional)
  • 1 stick of butter (Softened)

Icing + Filling

  • ¼ cup powdered sugar substitute
  • ¼ tsp vanilla
  • 2 tbsp almond milk
  • 1 pint of Keto Pint Ice Cream (flavor of your choice)

Instructions

  1. Sift together flours, sugar, spices, salt, baking powder and xanthan gum into a mixing bowl
  2. Add in your softened butter and knead dough until all ingredients are worked together. Chill dough in the freezer for 10 minutes
  3. When chilled, roll out between two pieces of parchment paper
  4. Using a gingerbread man cookie cutter, cut shapes into the dough (about 6 cookies)
  5. Add cookie dough shapes onto a lined baking sheet. Bake for 12 minutes
  6. When cookies are cooled, pipe designs using an icing made from powdered sugar substitute, vanilla, and nut milk
  7. Add Keto Pint Ice Cream of choice to a cookie. Add another cookie to make a sandwich. Dig in!
