  • 3 tbsp almond flour
  • ¼ tsp coconut flour
  • ½ tsp baking powder
  • 2 tbsp monk fruit or granulated sweetener of choice
  • 1 large egg
  • 1 tbsp lemon juice
  • ½ tbsp lemon zest
  • ½ tsp vanilla
  • Pinch of sea salt
  • 2 tbsp finely diced strawberries
  • Sugar-free strawberry jam (optional)
  • ¼ cup Keto Pint Strawberry Ice Cream
  • 3 tbsp unsweetened Vanilla Greek Yogurt

Instructions

  1. Grease a mug and add the egg, beating well.
  2. Add in almond flour, coconut flour, baking powder, and sweetener and mix.
  3. Add in lemon juice, lemon zest, vanilla, sea salt, and finely diced strawberries. Mix well until combined.
  4. Microwave for 1 1/2 - 2 minutes, depending on your microwave. Let the cake cool for 1 minute.
  5. In a small bowl, let the 1/4 cup of Keto Pint Strawberry Ice Cream thaw for 5 minutes. Then mix in the Greek yogurt.
  6. Add ice cream and yogurt mixture to the top of the mug cake, add jam, and enjoy!
