This Keto Mini Chocolate Swiss Roll recipe brings back all the nostalgia! These rolls are low-carb, no added sugar, and gluten-free. If you're looking for a sweet taste without all the carbs, then you've come to the right place!
In a medium bowl, add coconut flour, powdered sugar substitute, melted Keto Choc Dark Chocolate Bar, butter and salt. Combine until a sponge like mixture forms – should be able to hold its shape. *Note: If mixture is too wet, add 1 tbsp of coconut flour until all moisture is soaked up and a sponge like cake is formed.
Take your base mixture and form into a 6x6 square in between two pieces of parchment paper.
Cut into 4 equal, 3x3 squares and set aside.
In a separate bowl, using a hand mixer, mix the powdered sugar substitute, butter, heavy cream and vanilla to make a thick whipped cream frosting.
Spread the frosting evenly on each of the chocolate squares. Roll up each square to form a Swiss Cake.
