Keto Dark Chocolate Mousse

This dark chocolate mousse is a treat for the mint and chocolate lovers out there. It is creamy, smooth and easy to make.

1 ¼ cup heavy cream
⅓ cup monk fruit sweetener
1 tsp vanilla extract
1 bars Keto Choc Mint Dark Choc olate
1 tsp instant coffee granules
1 tbsp salted butter

Instructions

In a large mixing bowl, add the heavy cream. Using a hand mixer blend until soft peak forms.
Add monk fruit sweetener, vanilla extract and continue to blend until stiff peak forms.
Scoop out 2 tablespoons of whipped cream into a small bowl and it will be used for garnishing later.
Place the whipped cream in the refrigerator until the chocolate mixture is prepared.
Chop 2 bars of mint dark chocolate and transfer to a microwave safe bowl along with coffee granules and butter.
Microwave for a minute until the chocolate melts with 30 second interval.
Once chocolate is melted, take out the whipped cream from refrigerator, add 2 scoops of whipped cream to the melted chocolate. Fold and mix until combined.
Transfer the chocolate mixture to the whipped cream. Using a silicon spatula, gently fold in the mixture to combine until no white streaks are visible.
Divide the chocolate mousse between 4 – 6 glass cups. Garnish with a scoop of whipped cream and a piece of mint dark chocolate. Optionally sprinkle with chocolate shavings.
Serve chilled or refrigerate until serving. Leftover can be refrigerated for up to 3 days.

Notes

Instead of adding coffee granules, add an espresso shot while whipping heavy cream along with sweetener.
